Apple Jam with Speculoos Spices

I think I am a little addicted to  making jams. I see fresh fruits at the fruit stand and immediately start contemplating a jam with it. Of course an apple jam had been in my mind forever.. but since apples vanish from our fruit basket in no time so I never got around making one till now. This time I got down to business as soon as the apples were home... and look what a fantastic jam I made with them. The idea of using speculoos spices came from the Dutch Apple Tart recipe which some of the Baking Partners have baked this month. Other than that the recipe was inspired by the Apple Pie Jam from Taste of Home. 


I used Red Delicious apples to make the jam.. and then added some lemon juice for flavor. You might however like to reconsider the amount of lemon juice in case you use a tart apples. But do sample this recipe out.. its too good to pass..



Apple Jam with Speculoos Spices

Recipe by Tanusree Khandai
Prep time: 10 minutes                                                                            Cook time: 1 hour 30 mins
Total time: 1 hour 40 minutes                                                                 Yield: 12 ozs
Ingredients

  • 1/2 tsp white peppercorns
  • 4 cloves
  • green cardamom
  • 4 small red delicious apples, peeled and chopped
  • 1 cup water
  • 1 cup sugar
  • juice and rind of half an orange
  • juice and rind of half a lemon
  • 1/8 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground mace
  • 1/8 tsp ground ginger
  • 2 tsps unsalted butter, cut into cubes
Cooking Directions
  1. Roast together the cardamom, the cloves and peppercorns and grind them.
  2. Combine all the ingredients including the freshly ground spices in a large enough saucepan and stirring occasional cook the mixture over medium heat for about an hour, until the apple pieces can mashed with the back of a spoon.
  3. In the meantime preheat oven to 375° F.
  4. Transfer the contents of the saucepan into a pyrex bowl, put the butter cubes on top and tent the contents with an aluminium sheet.
  5. Bake the prepared pyrex bowl in the preheated oven for 30 minutes.
  6. Remove bowl from the oven and ladle the jam into a sterilized bottle.
