Toddler friendly Salmon Cakes


I had read about the health benefits of salmon and had ever since been looking for ways to introduce it to my son's diet. While I enjoyed most of the salmon dishes that I tried, my son wasn't very keen on them until I made these salmon cakes the other day.


The inspiration for these came from Dorie's Salmon Rillettes. Since the fish-cakes were for a two and half year old, I barely added any spices or herbs in them. In spite of that they turned out pretty good and both toddler and I relished each bite of our salmon cakes.

Salmon Cakes

Recipe by Tanusree 
Prep time: 10 minutes                                                                             Cook time: 7-8 minutes
Yield: 10


Ingredients
  • 1 salmon fillet
  • ½ cup water
  • ¼ inch lemon rind
  • ¼ tsp salt
  • 2 tbsp chopped onions
  • 1 medium potato, boiled
  • 1½ tbsp cornstarch
  • lemon juice to taste
  • white pepper and salt to taste
  • 1 tsp chives, chopped
  • 1 tbsp butter
  • about 2 tsps of olive oil for greasing the pan
Cooking Directions
  1. Cut the salmon fillet into ½ - 1 inch cubes.
  2. Pour ½ cup water into a pan. Add lemon rind, salt, onions and the salmon cubes to it. Over medium heat, bring the mix to a boil, then reduce the heat, cover and simmer for 5 minutes.
  3. Reserving the water, strain the ingredients and transfer them into the jar of your blender. Adding as much reserved liquid as required (I used most of it), blend the poached salmon cubes along with the onion et. al  until a uniform mixture is obtained. (Note that the mixture might not be smooth.)
  4. Using the back of spoon mash the potato. Add the salmon mixture, chives, butter and cornstarch to it, add lemon juice according to taste, season with salt and pepper and mix well.
  5. Divide the potato-salmon mixture into 10 parts and shape each into a patty.
  6. Put olive oil (or butter) in a frying pan. When the oil is nice and hot, add the fish cakes to the pan and cook for 4-5 minutes on each side until crisp and golden. 
  7. Cool completely. Serve with boiled or steamed vegetables.
